Ham and Bean Soup

4 thick slices pre-cooked ham cut into 1/2 inch squares
3 cans cannellini beans (white kidney) - rinsed and drained
1/4 large red onion diced
one good sprinkle black pepper
Pour all of the above into a crock pot. Add water until just about 1" more than the other ingredients. Cook for 2 hours on low; followed by 2 hours on high.
Serve. I served mine with peaches, saltines, and sharp cheddar cheese slices on the side. It was FABULOUS if I might brag a little. So simple and so yummy. Sean, who isn't a big bean fan said that I could cook this soup any day of the week and he would devour it! Definitely a hit with my family!
