Oh So Yummy Red Potatoes

6-8 medium red potatoes
1 Tbs Dill (approx)
1 Tbs Canola Oil (approx) [Olive Oil might be better for you, but I was out]
1 Tbs Garlic Salt (approx)
1 Tbs Black Pepper (approx)
1 Tbs Parsley (approx)

Rough Cut Potatoes into about 4 to 6 pieces (depending on how big the taters are). Put them into water until they are just covered in a pan. Boil mostly covered on Med for 10min.

Drain water from the Potatoes. Place Potatoes into a large dish. Sprinkle oil over potatoes and stir w/spoon to cover most of them with a little oil. Sprinkle garlic salt, pepper, dill, and parsley over the potatoes. Stir to coat relatively evenly.

Pour entire contents of potato bowl onto a cookie sheet. Bake in oven for approx 20 min at 350 degrees. (or until a fork goes easily into one of the large pieces)

Take out and ENJOY! :D

My family raved about this. My kids, who aren't big potato fans, even liked them so much they took seconds! I served them with a pre-marinated pork loin roast (from Costco), peaches, and cottage cheese. In hindsight I needed a grain, but forgot to make the rolls or take the bread out of the freezer! Next time...
